It is particularly effective in preventing deterioration caused by exposure to light on store shelves. It is a water soluble flavonol glycoside derived from rutin. Rutin is flavoid that is abundantly pesent in natural plants such as citrus, azuki beans and buck wheat. It has a strong antioxidant potency, but less water solubility.
