Our agar is a combination of polysaccharides made up of neutral molecules (agarose) plus other electrically charged molecules (agaropectine). It is obtained from various types of red algae of the Rhodofyceae family. The agar is soluble in boiling water and forms a gel when it is cooled down and does not melt again until heated to 85°C. It shows a yellowish white color and it is produced in a powder or strip form. It is an ideal product for use in food preparations, microbiology and molecular biology.
